This recipe makes for a perfect Sunday morning! The oats in these pancakes creates a very healthy yet hearty breakfast.
I love these pancakes! They are so delicious with a touch of maple syrup, banana, PB or apple butter! Be sure to make extra as they can be reheated in the microwave or toaster for weekday breakfasts.
Ingredients:
-1 cup oat flour (1 cup GF oats ground to a flour in a food processor or blender)
-1 cup GF rolled oats
-Dash of cinnamon
-1 mashed banana
-1 tsp of vanilla extract
-1 cup of egg whites or 8 egg whites
-1 cup of almond/coconut milk OR water (no sugar added)
-1 tbsp aluminum free baking powder
-Pinch of salt
-1 tbsp of flax
-Shredded apple or blueberries (optional)
Directions:
Blend the egg whites, banana, vanilla, flax, baking powder and salt in a blender. Add liquid mixture to a mixing bowl along with the 1 cup of oats and 1 cup of oat flour. Mix all the ingredients together and let sit overnight. In the morning add water OR coconut/almond milk to the batter until creamy enough to poor. Heat a skillet with coconut oil, grass-fed butter or use a non-stick skillet a cook the pancakes until golden brown.
