I love these nut and seed bars, they are absolutely delicious!
This recipe is very versatile as you can change any nuts, seeds, nut butters or fruit and replace them with your favorite kinds.
Ingredients:
– 2 1/2 cups of seeds/nuts (any of your favorite variety)
– 1/2 cup dried blueberries, cherries or apricots or any other naturally sweetened dried fruit (optional)
-1/4 unsweetened dried coconut
-2 tablespoons of cacao nibs (optional)
-1/3 cup all natural peanut butter
-1/4 cup coconut oil
-1/4 cup raw honey or maple syrup (vegan)
-1 tsp vanilla extract
-1/2-1 tsp of cinnamon
-Pinch of Celtic sea salt
-Dash of nutmeg
Directions:
In a large bowl mix all of your dry ingredients. Meanwhile, in a saucepan, melt the honey, PB, coconut oil and vanilla until a uniform and liquid consistency.
When the PB mixture is cool, blend with your dry ingredients until well combined.
Fill a silicon or parchment paper-lined (8×8) pan with your batter. Freeze these bars until solid before cutting them into individual servings.
