My favorite breakfast cereal that I eat almost every morning!
My Dad’s recipe of Toasted Oats can be enjoyed with whatever fruit you like best. My personal favorite is banana, especially with unsweetened vanilla almond milk! For extra fiber in the morning, you can add a little scoop of wheat bran. If you’ve just finished a workout, add 1/4 scoop or 1 tbsp of natural/naturally flavored protein powder. I also like to add 1 tbsp of ground flax to my cereal as it contains lots of healthy fats and slows down digestion, keeping me fuller longer. In my house, we make a big batch and keep for a couple weeks in an air tight container to keep it fresh and delicious!
Preheat oven to 300˚ F
Ingredients:
-8 cups of GF oats
– 2 cups of unsalted, raw pumpkin seeds
-2 cups of unsalted, raw sunflower seeds
-1/4 cup of sesame seeds (optional)
-1 healthy pinch of nutmeg
-Lots of cinnamon (well, maybe a couple tablespoons)
-1/3 cup of extra virgin cold pressed olive oil OR melted coconut oil
-1/3 cup of unpasteurized honey
Mix very thoroughly in a large bowl with a stand mixer. Bake in the oven until desired color is obtained or until the oats have dried out. Tip: Make sure to stir the oats occasionally for even cooking and listen for a “little pebble” like sound when stirring.
This recipe is very versatile, therefore, you can add your own spin on it, maybe with some unsweetened dried fruit and toasted almonds! Mix and match and create your own batch!
