For some reason (maybe this is just me) but I’ve always portrayed meatloaf in a negative light. I’m not sure if it’s because it reminds me of icky cafeteria food or if it’s just the name I don’t like, either way this delicious meatloaf will melt all of these worries away. Especially when made with high-quality meat, this recipe is protein-packed, super filling and perfect for dinner or leftover lunches. Oh and, it couldn’t be easier!
Ingredients
-900 g lean ground meat (preferably organic and grass-fed)
-2 cups oats (preferably gluten free)
-2 organic eggs
-1/2 cup low sugar B.B.Q sauce
-1/4 cup organic, non-gmo ketchup
-1 tbsp Italian all spice
-Salt and pepper (to taste)
-1 cup chopped, diced onions that have been lightly sautéed on medium heat in coconut oil, until softened and lightly browned
-Chopped spinach (optional and as much as you’d like)
Preheat the oven to 375˚F
Mix all of the ingredients together and transfer to a non-stick or coconut oil-greased loaf pan (banana bread pan) and bake for about an hour until the top of the meatloaf is a deep golden brown. That’s it!
