So I know my last recipe was a banana muffin recipe, but this one is just too good not to share! I hope you love it as much as I do. These muffins are both added-sugar free, GF and high in protein, they taste just like ones you’d buy fresh from a bakery!!

Ingredients:

-4 (as ripe as you have) bananas (mashed)

-1 egg

-1 tbsp pure vanilla extract

-2 tbsp melted coconut oil

-1/2 – 1 tsp ground cinnamon

-1 tsp baking powder

-1 tsp baking soda

-1/2 cup preferably vegan vanilla flavoured protein powder (collagen peptides might work too! I have yet to try it!)

-1/2 cup almond flour

-1/2 coconut or rice flour

-1/2 cup dark chocolate chips (optional but a MUST in my opinion)

Directions:

Preheat oven to 350˚F. In a large bowl mash the banana then whisk in the egg, vanilla and coconut oil. In a separate bowl stir together the cinnamon, baking powder, baking soda, protein powder and flours. Slowly add the dry ingredients to the wet ingredients and stir until combined. Gently fold in the chocolate chips and divide the batter amongst 12 muffin tin cups (lined, silicone or lightly greased with coconut oil). Bake for 30-40 minutes or until a toothpick comes out clean. Don’t worry so much about over-baking these, just like banana bread, this recipe requires a longer cooking time.

Enjoy (warm with a dollop of almond butter…Mmmm)!!
